Chef Guillermo Pernot is credited with introducing Nuevo Latino cuisine to Philadelphia. 

He is the author of "Ceviche!: Seafood, Salads and Cocktails with a Latino Twist" and was one of the featured presenters at the Chefs Culinary Experience session at the 2008 gathering of the National Association of Catering Executives.
